Simple, Soulfoul Bruschetta:  A Vegan Classic with Hearth

There’s something timeless about bruschetta—fresh tomatoes, fragrant basil, and golden toasted bread coming together in a bite that feels like sunshine. Whether you’re hosting a cozy gathering or just craving something vibrant and satisfying, this recipe is a celebration of simplicity and flavor.

🌿 Ingredients:

• 5 ripe tomatoes, diced
• A handful of fresh basil leaves, sliced into thin ribbons
• 5 cloves of garlic (4 for the tomato mix, 1 for the toast)
• Salt and pepper to taste
• 1 tablespoon olive oil (for the tomato mix)
• 1 tablespoon balsamic vinegar
• Rustic bread of your choice
• 3 tablespoons olive oil (for brushing the bread)


🧄 Step-by-Step Magic:

1. Prepare the Tomato Topping
In a bowl, combine the diced tomatoes, basil ribbons, and 4 minced garlic cloves. Add salt and pepper to taste, then drizzle in 1 tablespoon of olive oil and 1 tablespoon of balsamic vinegar. Mix gently, cover, and let the flavors mingle while you prepare the bread.
2. Infuse the Bread with Flavor
Mash the remaining garlic clove and stir it into 3 tablespoons of olive oil. Slice your bread into thick pieces, then brush each slice generously with the garlic-infused oil. Toast until golden and crisp—either in the oven or on a skillet.
3. Assemble and Serve
Spoon the marinated tomato mixture onto each toasted slice. Serve immediately while the bread is warm and the topping is fresh.
